After 36 months of ageing on yeasts, here is a classically made 100% Chardonnay wine of impressive structure and elegance, ideal as an aperitif but also brings out its best when paired with fish, poultry or game.

Caratteristiche tecniche

Production

60hl per hectare, 100% Chardonnay, average age of the vines is 35 years.

Vinification

gentle pressing and the first fermentation occurs in steel vats at a temperature of 15°C. The second fermentation occurs in the bottle, always at a temperature of 15°C.

Ageing

in the bottle on yeasts for at least 36 months.

Colour

intense straw-yellow with a fine, persistent perlage.

Fragrance

intense and well-balanced with hints of fresh fruit (banana and citrus) and a pleasant trace of yeast (bread crust).

Flavour

with a noticeable but well-balanced acidity and an impressive structure that results in it being velvety and persistent in the palate.
